Are the indexes or lists of files ever sent from the machine Everything is loaded on?

No.
I did monitor Everything (and other programs) for quite a while, but no suspicious activity.


But the usual problem with being paranoid is this: Can you trust my answer? ...
(I don't think that you are paranoid; just cautious)
